Week 1 & Christmas

Merry Christmas!!!
We had a great Christmas out here in Colorado this year. We kicked it off with a Christmas eve party at Micah's sister Sara's house. I think she invited the entire ward plus a few, but it's alright, it was still very fun. One thing I've learned about the Espinoza family is that they definitely live by the saying, 'the more the merrier'. Here are some Christmas photos!


Micah and I contributed our Chocolate Fountain to the party, which started out as a flop because the chocolate was too thick, but ended up great once we thinned it out. I made a brand new dessert as part of my Week 1 of my new goal. It was a Chocolate peppermint brownie dessert. It was delicious! And then the day before I made Micah a steak with a mushroom, onion, and red pepper sauce on top. They were both a hit! I kept getting compliments on the dessert, and then Micah told me the dinner I made up without a recipe was one of the best I've ever cooked. Turns out that the sauce I made is actually part of a traditional German meal. Funny huh!? Here are the pictures.

My Resolution

Hello Everyone,
I have just spent my Saturday night doing two things. Taking care of my sick husband and watching Julie & Julia. I have found that doing these two things really makes one feel very good about themselves and gives them a desire to accomplish something great. Not only because it is nice to be able to provide comfort to a sick spouse, but it is empowering to watch a movie like Julie & Julia, and to see how two ordinary women do very extraordinary things. You see both of them find something that they love to do and turn it into an amazing part of their life! For anyone who has not seen this movie, I highly recommend it. The movie itself isn't the fantastic part, its the stories behind it. And as a plus, the two leads really are fantastic. Meryl Streep is an all star, and Amy Adams is my all time favorite. I absolutely ADORE her!

After watching this movie I have this new desire to cook, cook, cook! I am going to do my own little project, but not even close to the same level that Julie Powell took it to. I am just going to challenge myself to actually cook something new, once a week! I will pick a random recipe out of the cookbook and then get myself the ingredients, and then learn a new meal! I keep telling myself (and Micah) that one day I will be a good cook like my grandma and will be able to cook these fabulous meals for my children when we have family dinner. But how am I going to ever learn to cook these things unless I actually get off my patootie and do it!? So this is my new resolution. I am going to learn to cook something new, and delicious, every week. Hopefully it will work out that I will be able to develop a bit of a skill at cooking and I will be able to take my resolution to new lengths. But baby steps! I will work my way up with it. Right now I just need to focus on finally using all those pots and pans I got as wedding gifts.

At the moment Micah is unaware of this break through I have had, due to him being drugged up on the NyQuil I brought home. But the moment we get up tomorrow I will tell him of this new goal and see how he takes it. If the movie had one good support for me, it would definitely be that men are always up for a yummy dinner. So I'm sure he will back me up 100%. As for tonight, I am going to let myself relax, dream of food, and figure out which recipe to try first.
